Financier Cakes
Financiers are small, rectangular French almond cakes named after gold bars, as they were originally created by a baker near the Paris Stock Exchange. They are known for their moist, tender texture and rich flavor of browned butter and ground almonds.

- 100g Butter
- 60g Powdered sugar
- 40g Ground almonds
- 30g Flour
- 3 Egg whites
- 1 Prise Pinch of salt
- 1/2 TL Vanilla extract
التحضير
- Melt the butter in a small saucepan over medium heat and continue to cook until it turns golden brown and smells nutty (brown butter/beurre noisette). Strain through a fine sieve and let cool.
- Combine powdered sugar, ground almonds, flour, and salt in a bowl.
- Lightly whisk the egg whites until frothy, but not stiff. Add to the brown butter mixture.
- Add the dry ingredients to the wet ingredients and mix well until combined. Add vanilla extract.
- Grease and flour Financier molds (or mini-muffin molds). Fill the molds evenly with batter.
- Bake in a preheated oven at 180°C (350°F) for 12-15 minutes, until the edges are golden brown and the center is lightly springy.
- Remove the Financiers from the oven and let them cool in the molds for 5 minutes, then turn them out onto a wire rack to cool completely.
