Financier Cakes

Financiers are small, rectangular French almond cakes named after gold bars, as they were originally created by a baker near the Paris Stock Exchange. They are known for their moist, tender texture and rich flavor of browned butter and ground almonds.

  1. Melt the butter in a small saucepan over medium heat and continue to cook until it turns golden brown and smells nutty (brown butter/beurre noisette). Strain through a fine sieve and let cool.
  2. Combine powdered sugar, ground almonds, flour, and salt in a bowl.
  3. Lightly whisk the egg whites until frothy, but not stiff. Add to the brown butter mixture.
  4. Add the dry ingredients to the wet ingredients and mix well until combined. Add vanilla extract.
  5. Grease and flour Financier molds (or mini-muffin molds). Fill the molds evenly with batter.
  6. Bake in a preheated oven at 180°C (350°F) for 12-15 minutes, until the edges are golden brown and the center is lightly springy.
  7. Remove the Financiers from the oven and let them cool in the molds for 5 minutes, then turn them out onto a wire rack to cool completely.
