Bajan Raisin Scones
These scones are a popular tea-time treat from Barbados, known for their slightly sweet and buttery texture. They are perfect with coffee or tea and often include raisins for added sweetness and moistness.

- 2 Tassen All-purpose flour
- 1/4 Tasse Granulated sugar
- 1 Esslöffel Baking powder
- 1/2 Teelöffel Salt
- 1/2 Tasse Cold butter, cubed
- 3/4 Tasse Whole milk
- 1/2 Tasse Raisins
- 1 Teelöffel Vanilla extract
- 1 Egg (for egg wash, optional)
التحضير
- Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the cold butter using your fingertips or a pastry blender until the mixture resembles coarse crumbs.
- Add raisins and mix well. In a separate bowl, whisk together milk and vanilla extract. Add the wet ingredients to the dry and mix gently until a dough forms. Do not overmix.
- Turn the dough out onto a lightly floured surface and roll to 2-3 cm thick. Cut out scones using a 5 cm round cutter. Gather and re-roll scraps.
- Place scones on the prepared baking sheet. If desired, brush the tops with beaten egg. Bake for 12-15 minutes, or until golden brown.
- Remove from oven and let cool on a wire rack. Serve warm, optionally with butter or jam.
