Ingredients
- 200g All-purpose flour
- 2 EL Sugar
- 2 TL Baking powder
- 1/2 TL Salt
- 1/2 TL Ground Cinnamon
- 1/4 TL Grated Nutmeg
- 1 Large Egg
- 250ml Whole milk or Coconut milk
- 2 EL Melted butter or Vegetable oil
- 100g Freshly grated coconut or shredded coconut
- Pflanzenöl Vegetable oil, for frying
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk together the egg, milk, and melted butter (or oil).
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
- Gently fold in the grated or shredded coconut.
- Heat a lightly oiled frying pan or griddle over medium heat.
- Pour about 1/4 cup of batter per flapjack onto the hot pan. Cook until bubbles appear on the surface and the edges set (about 2-3 minutes).
- Flip and cook on the other side until golden brown (about 1-2 minutes).
- Repeat with the remaining batter. Serve hot with syrup, fresh fruit, or condensed milk.
