Ingredients
- 250g 250g salt cod
- 2 mittelgroße 2 medium potatoes, cooked and mashed
- 1/2 1/2 onion, finely chopped
- 2 EL 2 tbsp fresh parsley, chopped
- 1 1 Scotch Bonnet pepper, deseeded and finely chopped (or to taste)
- 1/2 Teelöffel 1/2 teaspoon dried thyme
- 1 1 egg
- 2 EL 2 tbsp all-purpose flour
- Pflanzenöl Vegetable oil for frying
- Salz und schwarzer Pfeffer Salt and black pepper to taste
Instructions
- Soak the salt cod in cold water overnight, changing the water several times to remove salt. Drain and boil until tender. Let cool and flake.
- In a large bowl, combine the flaked cod, mashed potatoes, onion, parsley, Scotch Bonnet pepper, and thyme.
- Add the egg and flour and mix well until a pliable mixture forms. Season with salt and pepper to taste.
- Form the mixture into small, flat patties.
- Heat vegetable oil in a frying pan over medium heat. Fry the fish cakes in batches for about 3-4 minutes per side, until golden brown and crispy.
- Drain on paper towels and serve immediately, often with a spicy dipping sauce.
