Dominican Cassava Fritters (Arepitas de Yuca)
Arepitas de Yuca are crispy, savory fritters made from grated cassava root, popular in the Dominican Republic and other Caribbean countries. They are crispy on the outside and soft on the inside, often served for breakfast or as a side.

Ingredients
- 500g Cassava (yuca), peeled and grated
- 1/4 Tasse All-purpose flour
- 1/2 Small onion, finely grated or minced
- 1 Garlic clove, minced
- 1/2 TL Salt
- 1/4 TL Black pepper
- 1/4 TL Ground cumin (optional)
- 2 EL Fresh cilantro, chopped (optional)
- 500ml Vegetable oil for frying
Instructions
- Finely grate the peeled cassava root. Squeeze the grated cassava tightly in a clean kitchen towel to remove excess liquid.
- In a large bowl, combine the squeezed cassava, flour, grated onion, minced garlic, salt, black pepper, and optional cumin and cilantro.
- Mix the mixture well until it comes together to form a pliable dough. Add a little more flour or water if needed to adjust consistency.
- Form the dough into small, flat discs or balls (about 5 cm / 2 inches in diameter).
- Heat vegetable oil in a deep pot over medium heat (approx. 175°C / 350°F).
- Fry the arepitas in batches until golden brown and crispy (about 3-5 minutes per side).
- Remove from oil with a slotted spoon and drain on paper towels.
- Serve hot, optionally with a hot sauce or lime wedges.
