Green Banana Porridge
Green Banana Porridge is a traditional, nutritious Caribbean breakfast, particularly popular in Jamaica. It's made from unripe green bananas, grated or pureed, then cooked with coconut milk and spices like nutmeg and cinnamon into a creamy, subtly sweet porridge.

Ingredients
- 4 Green bananas (unripe)
- 1 Dose (400ml) Coconut milk
- 1 Tasse Water
- 1/2 TL Ground cinnamon
- 1/4 TL Freshly grated nutmeg
- 1/4 TL Salt
- 2-4 EL Condensed milk or sugar
- 1 TL Vanilla extract (optional)
Instructions
- Peel the green bananas. It's best to score a light line down the skin with a knife, then carefully peel. Immediately place the peeled bananas in cold water to prevent browning.
- Grate the bananas or cut them into small pieces and blend in a food processor with a little water until a smooth paste forms.
- In a medium saucepan, bring the coconut milk and water to a boil. Add cinnamon, nutmeg, and salt.
- Slowly whisk the banana paste into the boiling liquid, stirring constantly to prevent lumps. Reduce heat to low.
- Simmer the porridge for about 15-20 minutes, stirring regularly, until it thickens and becomes creamy. Be careful to prevent it from sticking to the bottom.
- Stir in condensed milk or sugar and vanilla extract (if using). Taste and sweeten further if desired.
- Serve hot, optionally sprinkled with a pinch of extra cinnamon or nutmeg.
