  1. Peel the green bananas. It's best to score a light line down the skin with a knife, then carefully peel. Immediately place the peeled bananas in cold water to prevent browning.
  2. Grate the bananas or cut them into small pieces and blend in a food processor with a little water until a smooth paste forms.
  3. In a medium saucepan, bring the coconut milk and water to a boil. Add cinnamon, nutmeg, and salt.
  4. Slowly whisk the banana paste into the boiling liquid, stirring constantly to prevent lumps. Reduce heat to low.
  5. Simmer the porridge for about 15-20 minutes, stirring regularly, until it thickens and becomes creamy. Be careful to prevent it from sticking to the bottom.
  6. Stir in condensed milk or sugar and vanilla extract (if using). Taste and sweeten further if desired.
  7. Serve hot, optionally sprinkled with a pinch of extra cinnamon or nutmeg.
