- 1 Tasse 1 cup fine cornmeal
- 4 Tassen 4 cups water
- 1 Dose (400ml) 1 can (400ml) coconut milk
- 1/2 Tasse 1/2 cup sugar (or to taste)
- 1 Teelöffel 1 teaspoon vanilla extract
- 1/2 Teelöffel 1/2 teaspoon ground cinnamon
- 1/4 Teelöffel 1/4 teaspoon ground nutmeg
- 1 Prise 1 pinch salt
- 2 EL 2 tbsp raisins (optional)
Instructions
- Take a large, heavy-bottomed pot to prevent burning. Add the fine cornmeal and whisk it with 250 ml of cold water until smooth. Ensure no lumps remain, as this is crucial for achieving a creamy texture in your Mais Moulu. This initial step is key to the porridge's consistency.
- Now, incorporate the remaining 750 ml of water, the full 400 ml can of coconut milk, sugar, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Whisk everything thoroughly to ensure all the flavors are well combined. This step forms the aromatic foundation of your authentic Haitian breakfast.
- Heat the mixture over medium heat (about setting 5-6 out of 9) on the stovetop. Stir continuously with a wooden spoon or whisk, paying extra attention to the bottom of the pot, to prevent sticking. Once small bubbles appear and the mixture slightly thickens, it has reached its boiling point.
- Immediately reduce the heat to the lowest setting (level 1-2) and let the porridge simmer gently for 15-20 minutes. Stir every few minutes to prevent the cornmeal from sticking to the bottom and to help it develop a wonderfully creamy consistency. Aim for a temperature around 90-95 °C.
- If you're using raisins, stir them into the cooked cornmeal porridge now. The residual heat will gently soften them and add an extra layer of sweetness to the dish. Mix everything thoroughly so the raisins are evenly distributed, making every spoonful a delightful experience.
- Serve the Haitian Cornmeal Porridge immediately after preparation while it's still warm and wonderfully creamy. For the perfect finishing touch, you can optionally sprinkle a pinch of extra cinnamon on top to intensify its aromatic profile. It's a comforting treat for any time of day.
