Instructions

  1. In a large, heavy-bottomed saucepan or deep pot, carefully whisk the fine cornmeal with 250 ml of cold water until completely smooth. This crucial step prevents lumps from forming later and ensures a wonderfully creamy porridge. Make sure the cornmeal is fully dissolved before proceeding.
  2. Bring the remaining 750 ml of water to a rolling boil in a separate pot. Once vigorously boiling, slightly reduce the heat and gradually pour in the prepared cornmeal mixture. Stir continuously with a whisk or wooden spoon while pouring to prevent sticking and ensure even incorporation.
  3. Reduce the heat to its lowest setting and let the porridge gently simmer for precisely 15 minutes. Stir occasionally, especially scraping the bottom, to prevent it from sticking. You'll observe the mixture gradually thickening and developing its characteristic porridge texture as it cooks.
  4. Now, thoroughly stir in the coconut milk, sweetened condensed milk, ground cinnamon, grated nutmeg, and salt. Ensure all ingredients are completely combined and distributed throughout the porridge. Taste a small amount and adjust the sweetness or spices to your preference. An extra pinch of nutmeg can truly enhance the flavor.
  5. Continue to gently simmer the porridge over low heat for another 5-10 minutes. Stir frequently during this period to achieve your desired consistency – it should be beautifully creamy and not too runny. Be careful not to let it become too thick, as it will continue to firm up slightly as it cools. A smooth, spoonable texture is ideal.
  6. Finally, remove the pot from the heat and stir in the vanilla extract until fully incorporated. The vanilla extract adds a wonderful, finishing touch. Serve the Jamaican Cornmeal Porridge immediately while still hot. Optionally, garnish with some fresh coconut flakes or an extra sprinkle of cinnamon.
