  1. In a large bowl, combine flour, baking powder, salt, and optional sugar.
  2. Add the 1 tablespoon of vegetable oil to the flour mixture and mix well.
  3. Gradually add water and knead into a firm but pliable dough. Do not over-knead.
  4. Divide the dough into 8-10 equal pieces and shape them into flat round or oval discs.
  5. Heat the remaining vegetable oil in a deep pot or skillet over medium heat (about 170-175°C / 340-350°F).
  6. Carefully place the dough discs into the hot oil and fry in batches.
  7. Fry until golden brown and crispy on each side, flipping once.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Serve hot.
