  3. Add the onion, garlic, red and green bell peppers, tomatoes, and Scotch Bonnet pepper (if using). Stir and simmer for 5-7 minutes until the vegetables are slightly tender.
  4. Add the thyme and black pepper. Gently fold in the flaked mackerel. Continue to simmer on low heat for another 10-15 minutes to allow the flavors to meld.
  5. Meanwhile, in a separate pot, boil the green bananas in salted water until tender, about 15-20 minutes. Drain.
  6. Serve the Mackerel Rundown hot with the boiled green bananas.
