Jamaican Mackerel Rundown with Boiled Bananas

Ingredients
- 2 Dosen (je 150g) canned mackerel in brine or oil, drained
- 1 Dose (400ml) coconut milk
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tomatoes, diced
- 1 Scotch Bonnet pepper, deseeded and minced (optional)
- 1 Zweig sprig of thyme
- ½ Teelöffel black pepper
- 4 green bananas (cooking bananas), peeled and halved
Instructions
- Drain the mackerel and flake it into bite-sized pieces. If using mackerel in brine, soak it in water for 10 minutes, then drain and rinse to remove excess salt.
- In a pot, bring the coconut milk to a simmer over medium heat.
- Add the onion, garlic, red and green bell peppers, tomatoes, and Scotch Bonnet pepper (if using). Stir and simmer for 5-7 minutes until the vegetables are slightly tender.
- Add the thyme and black pepper. Gently fold in the flaked mackerel. Continue to simmer on low heat for another 10-15 minutes to allow the flavors to meld.
- Meanwhile, in a separate pot, boil the green bananas in salted water until tender, about 15-20 minutes. Drain.
- Serve the Mackerel Rundown hot with the boiled green bananas.
