Breton Prune Flan
Far Breton is a traditional cake from Brittany, often served for breakfast or as a dessert. It has a unique, dense, and custardy texture, created by soaking prunes within the batter. A truly authentic piece of French country cooking.

Ingredients
- 250g all-purpose flour
- 150g granulated sugar
- 4 große large eggs
- 1 Liter milk
- 50g melted butter
- 1 TL vanilla extract
- Prise salt
- 200g pitted prunes
- 2 EL rum (optional)
Instructions
- If desired, soak the prunes in some warm water or rum for a few hours or overnight. Drain them.
- Preheat the oven to 180°C (350°F). Grease an ovenproof dish (approx. 24x30 cm or a 26 cm round dish) with butter.
- In a large bowl, mix flour, sugar, and salt. Whisk in the eggs one by one until a smooth paste forms.
- Gradually add the milk, stirring constantly to avoid lumps. Stir in the melted butter and vanilla extract.
- Pour half of the batter into the prepared dish. Distribute the soaked prunes evenly over it.
- Pour the remaining batter over the prunes.
- Bake in the preheated oven for 50-60 minutes, or until the Far Breton is golden brown and feels firm in the center (a toothpick should come out clean).
- Let cool completely before serving. Far Breton tastes best at room temperature or slightly chilled.
