  1. In a medium saucepan, gently heat the milk and water over medium heat. Add a pinch of salt and the honey, stirring well until the honey has dissolved.
  2. Once the liquid begins to simmer, gradually sprinkle in the instant polenta while continuously whisking to prevent lumps from forming.
  3. Reduce the heat to low and let the polenta simmer, stirring regularly. This will take about 10-15 minutes until it becomes thick and creamy.
  4. Remove the saucepan from the heat. Stir in the butter and vanilla extract until the butter is completely melted and well incorporated.
  5. Divide the polenta among four serving bowls. Arrange the fresh mixed berries on top.
  6. Dust with a little powdered sugar and garnish with fresh mint before serving immediately.
