Machaca with Eggs
This hearty Machaca con Huevo is a traditional Mexican breakfast that will kickstart your day with a burst of flavor. Tender dried beef, scrambled with eggs and fresh vegetables, offers a delightful explosion of taste.

Ingredients
- 200 g Machaca (dried beef)
- 4 große large eggs
- 1 EL vegetable oil
- 1 kleine small onion, diced
- 1 jalapeño, deseeded and minced
- 1 mittelgroße medium tomato, diced
- 1/2 TL cumin powder
- Salz und frisch gemahlener salt and freshly ground black pepper
- 4 corn tortillas
- 2 EL fresh cilantro, chopped
Instructions
- Heat the vegetable oil in a large skillet over medium heat. Add the diced onion and minced jalapeño, and sauté for 3-5 minutes until softened and fragrant.
- Add the machaca and diced tomato to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the machaca is lightly browned and the tomato has softened.
- Stir in the cumin powder. Crack the eggs directly into the skillet and scramble them into the machaca mixture until cooked to your desired consistency.
- Season the Machaca con Huevo with salt and freshly ground black pepper to taste.
- While the machaca is cooking, warm the corn tortillas in a separate dry skillet until soft and pliable, about 30 seconds per side.
- Serve the Machaca con Huevo immediately with the warm tortillas, garnished with fresh cilantro.
