  1. Preheat oven to 190°C (375°F). Prepare a pie dish (approx. 23 cm diameter).
  2. In a large bowl, combine cherries, sugar, cornstarch, lemon juice, almond extract, and salt.
  3. Roll out half of the puff pastry and place it into the pie dish. Add the cherry filling and dot with butter pieces.
  4. Roll out the remaining puff pastry and place it over the filling as a lid. Press the edges firmly and optionally cut a pattern or make vent slits with a knife.
  5. Brush the top crust with the beaten egg.
  6. Bake in the preheated oven for 45-55 minutes, or until the crust is golden brown and the filling is bubbling.
  7. Let cool for at least 30 minutes before serving.
