Ingredients
- 250g All-purpose flour
- 150g Brown sugar
- 100g Unsalted butter, softened
- 200g Grated coconut
- 100ml Coconut milk
- 2 Large eggs
- 1 Teelöffel Baking powder
- 1/2 Teelöffel Nutmeg, grated
- 1/2 Teelöffel Cinnamon
- Eine Prise Salt
- 50g Sultanas
- 50g Candied cherries
- 1 Teelöffel Vanilla extract
Instructions
- Preheat oven to 180°C (350°F) and grease and flour a loaf pan.
- In a large bowl, cream together butter and brown sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract and mix well.
- In a separate bowl, whisk together flour, baking powder, nutmeg, cinnamon, and salt.
- Gradually add dry ingredients to the wet ingredients, alternating with coconut milk, starting and ending with dry ingredients.
- Fold in grated coconut, sultanas, and candied cherries.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the sweet bread cool in the pan for 10 minutes, then invert onto a wire rack to cool completely before slicing and serving.
