  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using your fingertips or a pastry blender until the mixture resembles coarse crumbs.
  4. Add raisins and mix well. In a separate bowl, whisk together milk and vanilla extract. Add the wet ingredients to the dry and mix gently until a dough forms. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and roll to 2-3 cm thick. Cut out scones using a 5 cm round cutter. Gather and re-roll scraps.
  6. Place scones on the prepared baking sheet. If desired, brush the tops with beaten egg. Bake for 12-15 minutes, or until golden brown.
  7. Remove from oven and let cool on a wire rack. Serve warm, optionally with butter or jam.
