Coconut Bake (Trinidad)
Coconut Bake is a traditional Trinidadian bread often enjoyed for breakfast or as an accompaniment to savory dishes. It's subtly sweet, tender, and boasts a wonderful coconut flavor enhanced by freshly grated coconut.

Ingredients
- 250g All-purpose flour
- 1 TL Baking powder
- 1/2 TL Salt
- 50g Granulated sugar
- 150g Freshly grated coconut
- 50g Unsalted butter, chilled and cubed
- 120ml Milk
- 1 TL Vanilla extract
Instructions
- Preheat oven to 190°C (375°F). Lightly grease a baking sheet.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- Add the grated coconut and cold butter. Using your fingertips, work the butter into the flour mixture until crumbly.
- Add the milk and vanilla extract and knead into a soft dough. Do not overmix.
- On a lightly floured surface, roll or shape the dough into a round disc (about 2 cm thick).
- Place the dough on the prepared baking sheet and prick a few holes with a fork.
- Bake for 25-30 minutes, or until golden brown. Let cool on a wire rack.
