Haitian Sweet Potato Bread

Ingredients
- 500g Sweet potatoes, peeled and grated
- 200ml Coconut milk (full-fat)
- 100ml Milk
- 150g Brown sugar
- 2 Large eggs
- 50g Unsalted butter, melted
- 1 Teelöffel Vanilla extract
- 1 Teelöffel Ground cinnamon
- 1/2 Teelöffel Ground nutmeg
- 1/4 Teelöffel Ground cloves
- Eine Prise Salt
- 50g Raisins (optional)
Instructions
- Preheat oven to 180°C (350°F) and grease a 20x20 cm (8x8 inch) baking pan.
- Finely grate the peeled sweet potatoes.
- In a large bowl, combine the grated sweet potatoes, coconut milk, milk, brown sugar, eggs, melted butter, and vanilla extract. Mix well.
- Stir in the cinnamon, nutmeg, cloves, and salt, mixing thoroughly until all ingredients are evenly distributed.
- If desired, stir in the raisins.
- Pour the mixture into the prepared baking pan and smooth the top.
- Bake in the preheated oven for 80-90 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Remove the Pain Patate from the oven and let it cool completely before slicing and serving. It tastes great warm or cold.
