Haitian Sweet Potato Cake

Ingredients
- 500g Sweet potatoes, peeled and grated
- 200ml Coconut milk
- 150g Granulated sugar
- 2 Eggs
- 50g Unsalted butter, melted
- 1 Teelöffel Vanilla extract
- 1 Teelöffel Ground cinnamon
- 1/2 Teelöffel Ground nutmeg
- 1/4 Teelöffel Ground cloves
- 1 Prise Pinch of salt
- 100g Raisins (optional)
Instructions
- Preheat oven to 180°C (350°F). Grease and line a baking pan (approx. 20x20 cm) with parchment paper.
- In a large bowl, combine grated sweet potatoes, coconut milk, sugar, eggs, melted butter, and vanilla extract.
- Add cinnamon, nutmeg, cloves, and salt, and mix well until evenly combined.
- If using, fold in the raisins.
- Pour the mixture into the prepared baking pan and smooth the top.
- Bake in the preheated oven for 60-75 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool completely in the pan before serving.
