  2. In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Add the dry ingredients to the mashed bananas. Add milk and vanilla extract and stir until a smooth, thick batter forms. Do not overmix.
  4. Heat about 2 inches of vegetable oil in a large pot or deep skillet over medium heat (about 350°F / 175°C).
  5. Drop spoonfuls of batter into the hot oil. Do not overcrowd the pan.
  6. Fry the fritters for 2-3 minutes per side, turning once, until golden brown. Remove from oil with a slotted spoon and drain on a paper towel-lined plate.
