  1. Line a baking sheet with parchment paper and lightly grease it.
  2. In a medium saucepan, combine sugar and water over medium heat. Bring to a boil, stirring constantly, until the sugar has completely dissolved.
  3. Add shredded coconut, grated ginger, and salt. Mix well.
  4. Continue to simmer the mixture, stirring occasionally, until the liquid has evaporated and the mixture becomes very thick and sticky, about 15-20 minutes. Add vanilla extract if desired.
  5. Using a spoon, drop small portions of the coconut mixture onto the prepared baking sheet. They can be irregularly shaped, which is traditional.
  6. Allow to cool completely and set for at least 30 minutes. The drops will crisp up as they cool.
