Jamaican Coconut Drops
Jamaican Coconut Drops are crispy, chewy coconut confections widely popular in Jamaica. Made with fresh coconut, ginger, and sugar, they are an easy-to-make and delicious Caribbean treat.

Ingredients
- 2 Tassen Fresh coconut, shredded or finely chopped
- 1 Tasse Granulated sugar
- 1/2 Tasse Water
- 1 Teelöffel Fresh ginger, grated
- 1/2 Teelöffel Vanilla extract (optional)
- Prise Pinch of salt
Instructions
- Line a baking sheet with parchment paper and lightly grease it.
- In a medium saucepan, combine sugar and water over medium heat. Bring to a boil, stirring constantly, until the sugar has completely dissolved.
- Add shredded coconut, grated ginger, and salt. Mix well.
- Continue to simmer the mixture, stirring occasionally, until the liquid has evaporated and the mixture becomes very thick and sticky, about 15-20 minutes. Add vanilla extract if desired.
- Using a spoon, drop small portions of the coconut mixture onto the prepared baking sheet. They can be irregularly shaped, which is traditional.
- Allow to cool completely and set for at least 30 minutes. The drops will crisp up as they cool.
