Ingredients
- 250g All-purpose flour
- 1/2 Teelöffel Salt
- 125g Cold butter, cubed
- 60ml Ice water
- 200g Freshly grated coconut
- 150g Brown sugar
- 1/2 Teelöffel Ground nutmeg
- 1/4 Teelöffel Ground cinnamon
- 1 Esslöffel Vanilla extract
- 2 Esslöffel Lime juice
Instructions
- For the pastry, combine flour and salt in a large bowl. Add cold butter cubes and cut in with your fingers or a pastry blender until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until a dough forms. Do not overmix. Shape the dough into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- For the filling, combine grated coconut, brown sugar, nutmeg, cinnamon, vanilla extract, and lime juice in a saucepan. Cook over medium heat, stirring constantly, until the sugar has melted and the mixture has slightly thickened (about 5-7 minutes). Remove from heat and let cool.
- Preheat oven to 180°C (350°F).
- On a lightly floured surface, roll out the chilled dough thinly. Cut out circles (about 10 cm / 4 inches in diameter) using a round cutter or glass.
- Place a tablespoon of the coconut filling in the center of each pastry circle. Fold the edges of the dough inwards and pinch them together to form a small open cup holding the filling.
- Place the gizzadas on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the filling is caramelized.
- Let cool on a wire rack before serving.
