Instructions
- First, carefully peel the two large, green, unripe mangoes using a vegetable peeler. Then, carefully cut the flesh away from the pit, dividing it into bite-sized cubes or thin slices, depending on your preference. Ensure no fibers remain attached to the fruit flesh. This step is essential for the later texture of the dish.
- Place the prepared mango pieces into a large mixing bowl. Now, add the finely chopped Scotch Bonnet chilies – adjust according to your preferred spice level! Incorporate the finely minced garlic, fresh cilantro, salt, lime juice, and optional ground cumin. The bowl size is important to ensure everything can be mixed thoroughly later.
- Thoroughly combine all ingredients. It's best to use a large spoon or your hands (wearing gloves if you are sensitive to chili!) to ensure every mango piece is evenly coated with the aromatic marinade.
