Ingredients
- 900g Sweet potatoes, peeled and grated
- 200g Granulated sugar
- 100g Brown sugar
- 1 Dose (400ml) Coconut milk
- 120ml Evaporated milk
- 60g Unsalted butter, melted
- 2 Large eggs
- 1 TL Cinnamon, ground
- 1/2 TL Nutmeg, grated
- 1/2 TL Salt
- 1 TL Vanilla extract
- 50g Raisins (optional)
Instructions
- Preheat oven to 180°C (350°F). Grease and line a 9x13 inch baking dish with parchment paper.
- In a large bowl, combine the grated sweet potatoes, both sugars, coconut milk, evaporated milk, melted butter, eggs, cinnamon, nutmeg, salt, and vanilla extract. Mix well until combined.
- Optionally, add and fold in the raisins.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 70-80 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Remove from the oven and let cool for at least 30 minutes before serving. Enjoy warm or chilled.
