  1. Preheat oven to 180°C (350°F). Grease and line a 9x13 inch baking dish with parchment paper.
  2. In a large bowl, combine the grated sweet potatoes, both sugars, coconut milk, evaporated milk, melted butter, eggs, cinnamon, nutmeg, salt, and vanilla extract. Mix well until combined.
  3. Optionally, add and fold in the raisins.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 70-80 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  6. Remove from the oven and let cool for at least 30 minutes before serving. Enjoy warm or chilled.
