  1. Preheat oven to 160°C (325°F). Grease and flour a loaf pan (approx. 20 cm).
  2. In a saucepan, warm honey, milk, and brown sugar over low heat until the sugar dissolves. Do not boil. Remove from heat and set aside.
  3. In a large bowl, whisk together rye flour, all-purpose flour, baking powder, cinnamon, ginger, cloves, anise, and salt.
  4. Gradually add the liquid honey mixture to the dry ingredients, stirring well until a smooth batter forms. Optionally fold in the chopped candied orange peel.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake in the preheated oven for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the Pain d'épices cool in the pan for about 10 minutes, then invert onto a wire rack to cool completely.
  8. It tastes best if allowed to rest for a day or two before serving, as the flavors will develop further.
