Ingredients
- 250g Honey
- 100ml Milk
- 100g Brown sugar
- 200g Rye flour
- 50g All-purpose flour (Type 405)
- 1 Teelöffel Baking powder
- 1 Teelöffel Cinnamon
- 1/2 Teelöffel Ground ginger
- 1/4 Teelöffel Ground cloves
- 1/4 Teelöffel Ground anise
- 1 Prise Pinch of salt
- 50g Candied orange peel, chopped (optional)
Instructions
- Preheat oven to 160°C (325°F). Grease and flour a loaf pan (approx. 20 cm).
- In a saucepan, warm honey, milk, and brown sugar over low heat until the sugar dissolves. Do not boil. Remove from heat and set aside.
- In a large bowl, whisk together rye flour, all-purpose flour, baking powder, cinnamon, ginger, cloves, anise, and salt.
- Gradually add the liquid honey mixture to the dry ingredients, stirring well until a smooth batter forms. Optionally fold in the chopped candied orange peel.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the Pain d'épices cool in the pan for about 10 minutes, then invert onto a wire rack to cool completely.
- It tastes best if allowed to rest for a day or two before serving, as the flavors will develop further.
