Escovitch Fish (Jamaican Style)

Ingredients
- 2 ganze Whole fresh Tilapia or Snapper, cleaned and scaled
- 1 TL Salt
- 0.5 TL Black pepper
- 0.5 Tasse All-purpose flour
- Pflanzenöl Vegetable oil for frying
- 1 große Large onion, sliced
- 1 Carrot, julienned
- 1-2 Scotch Bonnet pepper (whole or sliced, to taste)
- 0.5 Tasse White vinegar
- 2 EL Water
- 1 EL Sugar
- Paar Zweige Few sprigs of thyme
Instructions
- Season the fish inside and out with salt and pepper. Lightly dust with flour.
- In a large skillet, heat enough oil to deep fry the fish. Fry the fish for about 5-7 minutes per side, until golden brown and cooked through. Remove and drain on paper towels.
- For the escovitch sauce, remove excess oil from the skillet, leaving about 1 tbsp. Add onions, carrots, Scotch Bonnet, and thyme. Sauté for 3-5 minutes until vegetables are slightly softened.
- Add vinegar, water, and sugar. Bring to a boil and simmer for 2 minutes.
- Pour the hot escovitch sauce over the fried fish. Serve immediately or allow to marinate for a few hours for deeper flavors.
