  1. Cut fish fillets into bite-sized pieces. Marinate with salt, pepper, and a little lime juice.
  2. In a large pot, heat vegetable oil over medium heat. Add onion and garlic and sauté for 3-4 minutes until fragrant.
  3. Add carrot, potato, and celery and sauté for another 5 minutes.
  4. Add water or fish stock and thyme sprigs. Bring to a boil, then reduce heat. Cover and simmer for 15-20 minutes until vegetables are tender.
  5. Add the marinated fish pieces and simmer for another 5-7 minutes until the fish is cooked through. Do not overcook to keep the fish tender.
  6. Season with the remaining lime juice and adjust salt and pepper if needed. Serve garnished with fresh parsley.
