Bakes and Saltfish
Bakes and Saltfish is a popular breakfast in Trinidad and Tobago and other parts of the Caribbean. Bakes are fried dough pockets, crispy outside and soft inside, perfect for scooping up the savory saltfish prepared with tomatoes and onions.

- 200g Salted codfish
- 2 Tassen All-purpose flour
- 2 TL Baking powder
- 1/2 TL Salt
- 1 EL Sugar
- 1 Tasse Water (approx.)
- 2 Tassen Vegetable oil for frying
- 1 Medium onion, chopped
- 2 Tomatoes, diced
- 2 EL Vegetable oil for saltfish

- Soak the salted codfish overnight in cold water, changing the water several times. The next day, boil the fish until tender. Drain, cool, and flake into small pieces.
- For the Bakes: In a large bowl, combine flour, baking powder, salt, and sugar. Gradually add water and knead into a soft, but not sticky, dough. Let the dough rest for 15 minutes.
- Divide the dough into 8-10 equal-sized balls. Roll each ball into a flat, round disc (about 4 inches in diameter).
- In a deep pot or fryer, heat the vegetable oil for frying over medium heat (approx. 170-180°C / 340-350°F). Fry the bakes individually until golden brown and puffed, flipping once. Drain on paper towels.
- For the saltfish: In a separate pan, heat 2 tablespoons of vegetable oil. Add chopped onion and sauté until softened (about 3 minutes).
- Add the diced tomatoes and flaked codfish. Mix well and cook for another 5-7 minutes, until the tomatoes are soft and the flavors have melded. Season with a little black pepper if desired.
- Slice open the warm bakes and serve with the saltfish filling.
