  1. Peel and quarter the potatoes, then boil them in salted water for about 20 minutes until soft. Drain and let them steam dry briefly.
  2. In a saucepan, heat the milk and 25g butter. Pass the potatoes through a potato ricer or mash them. Stir in the hot milk and butter mixture, season with salt and freshly grated nutmeg, until a creamy mash is formed.
  3. Peel, core, and chop the apples into small pieces. In a saucepan, cook with 50 ml water, sugar, and cinnamon for about 10-15 minutes until soft, then mash with a fork or blend into a puree.
  4. Peel the onions and cut them into fine rings. Heat the lard or oil in a pan and fry the onion rings over medium heat until golden brown and crispy. Remove and set aside.
  5. Slice the blood sausages into approximately 1.5 cm thick pieces. In the same pan, fry the blood sausage slices for 3-4 minutes on each side until crispy.
  6. Arrange the mashed potatoes, applesauce, and fried blood sausage on plates. Garnish with the crispy fried onions and fresh parsley.
