Ingredients
- 800 g floury potatoes
- 200 ml milk
- 50 g butter
- 4 apples (e.g. Boskop)
- 1 EL sugar
- 1/2 TL cinnamon
- 4 blood sausages (approx. 150g each)
- 2 onions
- 2 EL lard or oil
- Prise nutmeg
- Salz salt
- Pfeffer pepper
- Frische Petersilie fresh parsley
Instructions
- Peel and quarter the potatoes, then boil them in salted water for about 20 minutes until soft. Drain and let them steam dry briefly.
- In a saucepan, heat the milk and 25g butter. Pass the potatoes through a potato ricer or mash them. Stir in the hot milk and butter mixture, season with salt and freshly grated nutmeg, until a creamy mash is formed.
- Peel, core, and chop the apples into small pieces. In a saucepan, cook with 50 ml water, sugar, and cinnamon for about 10-15 minutes until soft, then mash with a fork or blend into a puree.
- Peel the onions and cut them into fine rings. Heat the lard or oil in a pan and fry the onion rings over medium heat until golden brown and crispy. Remove and set aside.
- Slice the blood sausages into approximately 1.5 cm thick pieces. In the same pan, fry the blood sausage slices for 3-4 minutes on each side until crispy.
- Arrange the mashed potatoes, applesauce, and fried blood sausage on plates. Garnish with the crispy fried onions and fresh parsley.
