- 2 EL apple cider vinegar
- 1 Kopf head of garlic
- 1 Stück white onion
- 2 Liter beef broth
- 1 Bund fresh cilantro
- 12 Stück corn tortillas
- 4 Stück lime

Instructions
- Destem and deseed the dried guajillo and ancho chilis. In a pot of boiling water, rehydrate them for about 15-20 minutes until softened. Drain and reserve the soaking water.
- In a blender, combine the rehydrated chilis, Roma tomatoes, garlic cloves, half of the white onion, cinnamon stick, cloves, cumin seeds, Mexican oregano, and apple cider vinegar. Blend until smooth, adding some reserved chili water or beef broth if needed to achieve a pourable consistency.
- Season the beef brisket generously with salt and pepper. In a large Dutch oven or oven-safe pot, sear the meat on all sides over medium-high heat until deeply browned. Remove the meat from the pot.
- Sauté the remaining half of the white onion in the same pot until softened. Add the chili sauce and simmer for about 5 minutes, stirring constantly, to deepen the flavors. Pour in the beef broth and bring to a boil.
- Return the seared beef to the pot, ensuring it is mostly submerged in the sauce. Cover the pot and simmer on low heat for 3-4 hours, or until the meat is very tender and easily shreds. Alternatively, this can be done in the oven at 160°C (325°F).
- Remove the beef from the sauce and shred it using two forks. Strain the sauce through a fine-mesh sieve to ensure a smooth consistency. Return the shredded meat to a portion of the consommé.
