  1. Heat olive oil in a paella pan over medium heat. Briefly sauté shrimp and squid until lightly pink, then remove and set aside.
  2. Add onion and bell pepper to the pan and sauté until soft, about 5 minutes. Add garlic and cook for another minute.
  3. Add grated tomato and saffron threads, stir well, and simmer for about 5-7 minutes until the liquid has evaporated and a thick sauce forms.
  4. Add the fideuà noodles to the pan and toast, stirring constantly, for about 2-3 minutes until lightly golden.
  5. Slowly add the fish broth and stir well. Bring to a boil, then reduce heat and simmer the noodles for 8-10 minutes until al dente and the broth is almost completely absorbed. (timerMinutes: 10)
  6. Return the shrimp and squid to the pan, gently fold them in, and simmer for another 2-3 minutes until everything is heated through.
  7. Season with salt and pepper to taste. Let rest for a few minutes before serving and sprinkle with fresh parsley.
