Ingredients
- 300g Fideuà noodles (short, thin noodles)
- 400g Shrimp, peeled and deveined
- 200g Squid, cleaned and cut into rings
- 1 Onion, finely chopped
- 2 Garlic cloves, minced
- 1 Ripe tomato, grated
- 1 Prise Pinch of saffron threads
- 700ml Fish broth
- 60ml Olive oil
- 1/2 Red bell pepper, cut into strips
- Salz und Pfeffer Salt and pepper
- 1 EL Chopped fresh parsley
Instructions
- Heat olive oil in a paella pan over medium heat. Briefly sauté shrimp and squid until lightly pink, then remove and set aside.
- Add onion and bell pepper to the pan and sauté until soft, about 5 minutes. Add garlic and cook for another minute.
- Add grated tomato and saffron threads, stir well, and simmer for about 5-7 minutes until the liquid has evaporated and a thick sauce forms.
- Add the fideuà noodles to the pan and toast, stirring constantly, for about 2-3 minutes until lightly golden.
- Slowly add the fish broth and stir well. Bring to a boil, then reduce heat and simmer the noodles for 8-10 minutes until al dente and the broth is almost completely absorbed. (timerMinutes: 10)
- Return the shrimp and squid to the pan, gently fold them in, and simmer for another 2-3 minutes until everything is heated through.
- Season with salt and pepper to taste. Let rest for a few minutes before serving and sprinkle with fresh parsley.
