  1. Heat olive oil in a paella pan or large, shallow pan over medium heat. Add the fideuà noodles and toast until golden brown, stirring constantly. Remove and set aside.
  2. Add a little more oil if needed. Sauté the onion and garlic until softened, about 5 minutes.
  3. Add the grated tomato and simmer for another 5 minutes, until the liquid has evaporated.
  4. Add the seafood (except shrimp, if using) and sauté briefly. Deglaze with white wine and reduce for a moment.
  5. Add saffron and fish broth. Bring to a boil, then evenly distribute the toasted noodles and shrimp (if using). Season with salt and pepper.
  6. Simmer the fideuà over medium heat without stirring until the noodles have absorbed the liquid and are al dente (approx. 10-15 minutes).
  7. Increase the heat and boil vigorously for the last 2-3 minutes to create a slight crust at the bottom (socarrat).
  8. Remove from heat, cover with a clean kitchen towel, and let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
