Seafood Fideuà
Fideuà is a traditional noodle dish from Valencia, similar to paella but using short, thin noodles instead of rice. It's packed with seafood and boasts an intense flavor, often featuring a crispy layer of browned noodles on top.

Ingredients
- 250g Fideuà noodles (or short vermicelli)
- 400g Mixed seafood (e.g., shrimp, mussels, calamari rings)
- 1 Onion, finely chopped
- 2 Garlic cloves, minced
- 1 Ripe tomato, grated
- 50ml Olive oil
- 1g Saffron threads
- 700ml Fish broth
- 100ml White wine
- Salz und Pfeffer Salt and pepper to taste
- Optional: frische Petersilie Optional: fresh parsley for garnish
Instructions
- Heat olive oil in a paella pan or large, shallow pan over medium heat. Add the fideuà noodles and toast until golden brown, stirring constantly. Remove and set aside.
- Add a little more oil if needed. Sauté the onion and garlic until softened, about 5 minutes.
- Add the grated tomato and simmer for another 5 minutes, until the liquid has evaporated.
- Add the seafood (except shrimp, if using) and sauté briefly. Deglaze with white wine and reduce for a moment.
- Add saffron and fish broth. Bring to a boil, then evenly distribute the toasted noodles and shrimp (if using). Season with salt and pepper.
- Simmer the fideuà over medium heat without stirring until the noodles have absorbed the liquid and are al dente (approx. 10-15 minutes).
- Increase the heat and boil vigorously for the last 2-3 minutes to create a slight crust at the bottom (socarrat).
- Remove from heat, cover with a clean kitchen towel, and let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
