Clafoutis is a traditional French baked dessert from the Limousin region. It consists of a thick, pancake-like batter baked with fresh cherries (classically with pits). This rustic dish is a wonderful combination of creamy custard and juicy fruit, ideal for a sweet breakfast or brunch.

Ingredients
- 500g fresh cherries (pitted, or with pits for authentic flavor)
- 3 large eggs
- 100g sugar
- 1 Teelöffel vanilla extract
- 1 Prise salt
- 60g all-purpose flour
- 250ml whole milk
- 30g melted butter (plus some for greasing the dish)
- Puderzucker powdered sugar for dusting
Instructions
- Preheat the oven to 180°C (350°F). Grease an oven-safe dish (approx. 24 cm diameter) with butter.
- Spread the cherries evenly in the prepared dish.
- In a large bowl, whisk together the eggs, sugar, vanilla extract, and salt until the mixture is light and frothy.
- Gradually whisk in the flour until no lumps remain.
- Stir in the milk and melted butter until a smooth batter forms.
- Carefully pour the batter over the cherries in the dish.
- Bake in the preheated oven for 35-45 minutes, or until the clafoutis is golden brown and a toothpick inserted into the center comes out clean.
- Remove the clafoutis from the oven and let it cool slightly. Dust with powdered sugar and serve warm or at room temperature.
