Ingredients
- 4 Scheiben Thick-cut bread or sourdough
- 4 Scheiben Cooked ham
- 100g Gruyère cheese, grated
- 2 Eggs
- 30g Butter
- 30g Flour
- 300ml Whole milk, warm
- 1/4 TL Nutmeg, grated
- Salz und Pfeffer Salt and pepper to taste
- 1 TL Dijon mustard (optional)
Instructions
- For the Béchamel sauce: In a saucepan, melt the butter. Add flour and cook, stirring constantly, for 1-2 minutes until a light roux forms.
- Gradually add the warm milk, whisking constantly, until the sauce thickens and is smooth. Season with nutmeg, salt, and pepper. Stir in Dijon mustard, if desired. Remove from heat.
- Lightly toast the bread slices or pan-fry them without oil until lightly golden.
- Spread a thin layer of Béchamel sauce on two slices of bread. Top with ham and half of the grated Gruyère. Place the remaining bread slices on top.
- Place the sandwiches on a baking sheet. Generously spread the remaining Béchamel sauce over the sandwiches and sprinkle with the remaining Gruyère.
- Bake in a preheated oven at 200°C (400°F) conventional heat for 10-15 minutes, until the cheese is melted and golden brown.
- While the sandwiches are baking, fry the eggs to your liking.
- Carefully remove each Croque Madame from the oven and immediately top with a fried egg. Serve hot.
