French Toast (Pain Perdu)
Pain Perdu, literally 'lost bread', is the French version of French Toast and a delicious way to use up stale bread. The bread is soaked in a mixture of eggs, milk, and sugar, then fried until golden brown. It's a sweet, comforting breakfast often served with powdered sugar, fresh fruit, or maple syrup.

Ingredients
- 4 Scheiben Stale brioche or white bread (approx. 2-3 days old)
- 2 Large eggs
- 120ml Milk
- 30g Sugar
- 1/2 Teelöffel Vanilla extract
- Prise Pinch of salt
- 1 Esslöffel Butter
- Optional Powdered sugar for dusting
- Optional Fresh berries
Instructions
- First, prepare the base: In a shallow dish, thoroughly whisk together the eggs, milk, sugar, vanilla extract, and a pinch of salt. Ensure the sugar fully dissolves, creating a homogeneous mixture that will later provide the perfect flavor. A fork or a small whisk works excellently for this step.
- Prepare the bread: Place the brioche or white bread slices individually into the egg mixture. Let each side soak for approximately 30 seconds. The bread should be well saturated but not become so soft that it falls apart. This is crucial for the texture of the finished Pain Perdu. Make sure the bread absorbs the liquid evenly.
- Prepare the skillet: Heat a large non-stick skillet over medium heat (about setting 5-6 out of 9) on the stove. Add the butter and let it melt until it slightly foams but doesn't brown. A good non-stick pan prevents sticking and ensures even browning. Uniform heat distribution is key here.
- Cook the French Toast: Carefully place the soaked bread slices into the hot skillet. Cook each side for 2-4 minutes until they are golden brown and appealingly crispy. Flip the slices once to brown both sides evenly. If necessary, slightly reduce the heat to prevent the bread from burning. Serve immediately, optionally dusted with powdered sugar.
