Gougères (Cheese Puffs)
Gougères are savory choux pastry puffs enriched with cheese. Originating from the Burgundy region, they are a popular aperitif snack but also make an excellent light, savory breakfast. They are crispy on the outside and airy and cheesy on the inside.

Ingredients
- 125ml water
- 50g unsalted butter
- 1/2 Teelöffel salt
- 1/4 Teelöffel freshly ground black pepper
- 75g all-purpose flour
- 2 large eggs
- 75g grated Gruyère cheese (or Comté)
- 1 Prise nutmeg
Instructions
- Preheat the oven to 200°C (390°F). Line a baking sheet with parchment paper.
- Bring water, butter, salt, and pepper to a boil in a saucepan over medium heat until the butter is melted.
- Add the flour all at once and stir vigorously with a wooden spoon until the dough pulls away from the sides of the pan and forms a ball (approx. 1-2 minutes).
- Remove the pan from the heat and beat in the eggs one at a time. Each egg must be fully incorporated before adding the next, until the dough is smooth and glossy.
- Stir in the grated cheese and nutmeg into the dough.
- Using two teaspoons or a piping bag, drop small mounds (approx. 3-4 cm diameter) of dough onto the prepared baking sheet, leaving some space between them.
- Bake in the preheated oven for 15 minutes at 200°C (390°F), then reduce the temperature to 180°C (350°F) and bake for another 10-15 minutes, until the gougères are golden brown and puffed. Do not open the oven door during baking.
- Serve warm immediately.
