King Cake
Galette des Rois is a traditional French cake celebrated for Epiphany (Three Kings' Day). It consists of puff pastry filled with a delicious almond cream (frangipane) and hides a small porcelain figurine (fève). Whoever finds the fève becomes king or queen for a day.

Ingredients
- 2 Rollen Puff Pastry
- 125g Almond Flour
- 100g Sugar
- 75g Softened Butter
- 2 Eggs
- 1 Tropfen Almond Extract
- 1 EL Rum (optional)
- 1 Egg Yolk (for glazing)
- 1 Fève (porcelain figurine)
Instructions
- For the frangipane: In a bowl, mix almond flour, sugar, softened butter, 1 egg, and almond extract (and optional rum) until a creamy mixture forms.
- Place one sheet of puff pastry on a baking sheet. Spread the frangipane mixture over it, leaving a 2 cm border free. Hide the fève.
- Moisten the edge of the puff pastry with a little water. Place the second sheet of puff pastry on top and press the edges firmly together.
- Whisk the egg yolk with a splash of water and brush it over the surface of the galette. Carefully score a pattern with a knife, without cutting entirely through the pastry.
- Bake in a preheated oven at 180°C (350°F) for about 35-45 minutes, until the galette is golden brown and puffed. If browning too quickly, cover with aluminum foil after about 25 minutes.
- Serve hot or lukewarm. Beware of the fève!
