Ingredients
- 100g All-purpose flour
- 100g Sugar
- 2 Eggs (medium)
- 100g Butter, melted and cooled
- 1/2 TL Baking powder
- 1 Prise Salt
- 1 TL Lemon zest (optional)
- 2 EL Powdered sugar (for dusting)
Instructions
- In a bowl, whisk eggs and sugar until the mixture is light and creamy.
- Mix flour, baking powder, and salt, then fold it into the egg-sugar mixture in portions.
- Gently fold in the melted, cooled butter and lemon zest (if using) until just combined.
- Cover the dough and let it rest in the refrigerator for at least 1 hour, preferably overnight. This is crucial for the Madeleines' hump.
- Preheat the oven to 200°C (fan assisted). Grease and lightly flour a Madeleine pan.
- Fill each indentation of the pan about two-thirds full with dough.
- Bake in the preheated oven for 8-12 minutes, until the edges are golden brown and the characteristic hump has formed.
- Carefully remove the Madeleines from the pan and let them cool on a wire rack. Dust with powdered sugar before serving.
