Milk Bread
Pain au Lait are small, soft milk rolls often eaten for breakfast or as a snack in France. They have a slightly sweet taste and a tender crumb. Perfect for dipping in coffee or spreading with jam.

Ingredients
- 250g All-purpose Flour
- 30g Sugar
- 1 Prise Salt
- 5g Active Dry Yeast
- 125ml Lukewarm Milk
- 1 Egg (room temperature)
- 40g Softened Butter
- 1 EL Milk (for brushing)
Instructions
- In a large bowl, mix flour, sugar, salt, and active dry yeast.
- Add lukewarm milk and the egg, then knead everything into a dough. After about 5 minutes, gradually knead in the softened butter until the dough is smooth and elastic (about another 10 minutes).
- Cover the dough and let it rise in a warm place for about 1 hour, until doubled in size.
- Lightly knead the dough on a lightly floured surface and divide it into 6-8 equal pieces. Roll each piece into an oval or round shape.
- Place the rolls on a baking sheet lined with parchment paper and let them rise again, covered, for 30-45 minutes.
- Preheat the oven to 180°C (350°F). Brush the rolls with a little milk and bake for 12-15 minutes until golden brown.
- Let cool on a wire rack and enjoy fresh.
