Durian Sticky Rice

Ingredients
- 300g Glutinous rice
- 400ml Coconut milk
- 100g Palm sugar
- 1/2 TL Salt
- 200g Fresh durian (flesh)
- 2 EL Toasted sesame seeds
- Einige Blätter Mint leaves
- 1 Prise Pandan leaf (optional)
- 1 TL Cornstarch (optional)
Instructions
- Thoroughly rinse the glutinous rice under cold running water until the water runs clear. Then, cover the rice with plenty of cold water in a bowl and let it soak for at least 4 hours or overnight.
- Drain the soaked rice and transfer it to a steamer. Steam for about 25-30 minutes, until the rice is tender and cooked through. A pandan leaf can be added during steaming for extra aroma.
- While the rice is steaming, combine 200 ml of coconut milk, palm sugar, and a pinch of salt in a saucepan over medium heat. Heat until the sugar is fully dissolved, but do not let it boil.
- Transfer the steamed rice to a bowl and immediately pour the warm coconut milk sauce over it. Stir well, cover the rice, and let it rest for 10-15 minutes to absorb the liquid.
- For the garnish sauce, gently heat the remaining 200 ml of coconut milk with a pinch of salt in a small saucepan. If desired, add a little cornstarch dissolved in water to achieve a slightly thicker consistency.
- Portion the prepared sticky rice onto plates. Arrange the fresh durian pieces alongside.
- Drizzle the dish with the remaining coconut milk sauce and garnish with toasted sesame seeds and fresh mint leaves, then serve immediately.
