  1. Thoroughly rinse the glutinous rice under cold running water until the water runs clear. Then, cover the rice with plenty of cold water in a bowl and let it soak for at least 4 hours or overnight.
  2. Drain the soaked rice and transfer it to a steamer. Steam for about 25-30 minutes, until the rice is tender and cooked through. A pandan leaf can be added during steaming for extra aroma.
  3. While the rice is steaming, combine 200 ml of coconut milk, palm sugar, and a pinch of salt in a saucepan over medium heat. Heat until the sugar is fully dissolved, but do not let it boil.
  4. Transfer the steamed rice to a bowl and immediately pour the warm coconut milk sauce over it. Stir well, cover the rice, and let it rest for 10-15 minutes to absorb the liquid.
  5. For the garnish sauce, gently heat the remaining 200 ml of coconut milk with a pinch of salt in a small saucepan. If desired, add a little cornstarch dissolved in water to achieve a slightly thicker consistency.
  6. Portion the prepared sticky rice onto plates. Arrange the fresh durian pieces alongside.
  7. Drizzle the dish with the remaining coconut milk sauce and garnish with toasted sesame seeds and fresh mint leaves, then serve immediately.
