Ingredients

Instructions

  1. First, prepare the matcha infusion. Whisk 1 tbsp of matcha powder with 100ml of warm (not boiling) milk in a shallow dish until completely dissolved. Let the mixture cool slightly.
  2. In a large bowl, whisk together the mascarpone, sugar, vanilla extract, and a pinch of salt until a smooth cream forms.
  3. In a separate bowl, whip the cold heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined and an airy cream is achieved.
  4. Briefly dip each ladyfinger into the cooled matcha infusion. Do not soak them for too long, as they will become soggy. Arrange a layer of soaked ladyfingers at the bottom of a serving dish.
  5. Spread half of the mascarpone cream evenly over the layer of ladyfingers. Then add another layer of soaked ladyfingers.
  6. Finish the tiramisu with the remaining mascarpone cream. Smooth the surface with a spatula.
  7. Refrigerate the Matcha Tiramisu for at least 4 hours, ideally overnight, to allow it to set and the flavors to fully develop.
  8. Before serving, dust the surface of the tiramisu with the remaining matcha powder and powdered sugar through a fine sieve. Optionally, garnish with mint leaves.
