Matcha Tiramisu

Ingredients
- 400g Mascarpone
- 2 EL Matcha powder
- 200g Ladyfingers
- 200ml Heavy cream
- 80g Sugar
- 1 TL Vanilla extract
- 1 Prise Pinch of salt
- 100ml Milk
- 1 EL Powdered sugar for dusting
Instructions
- First, prepare the matcha infusion. Whisk 1 tbsp of matcha powder with 100ml of warm (not boiling) milk in a shallow dish until completely dissolved. Let the mixture cool slightly.
- In a large bowl, whisk together the mascarpone, sugar, vanilla extract, and a pinch of salt until a smooth cream forms.
- In a separate bowl, whip the cold heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined and an airy cream is achieved.
- Briefly dip each ladyfinger into the cooled matcha infusion. Do not soak them for too long, as they will become soggy. Arrange a layer of soaked ladyfingers at the bottom of a serving dish.
- Spread half of the mascarpone cream evenly over the layer of ladyfingers. Then add another layer of soaked ladyfingers.
- Finish the tiramisu with the remaining mascarpone cream. Smooth the surface with a spatula.
- Refrigerate the Matcha Tiramisu for at least 4 hours, ideally overnight, to allow it to set and the flavors to fully develop.
- Before serving, dust the surface of the tiramisu with the remaining matcha powder and powdered sugar through a fine sieve. Optionally, garnish with mint leaves.
