Ingredients
- 400g Silken tofu
- 200ml Brown sugar syrup
- 100g Tapioca pearls (small)
- 1 Liter Water
- 100g Cane sugar
- 100ml Water (for syrup)
- 1/2 TL Vanilla extract
- 1 Prise Salt
Instructions
- In a pot, bring 1 liter of water to a boil, then add the small tapioca pearls. Cook for about 15 minutes, stirring occasionally, until they become translucent and tender.
- Once cooked, drain the tapioca pearls and rinse them under cold water to prevent sticking. Set aside.
- For the syrup, combine the cane sugar and 100 ml of water in a small saucepan over medium heat. Stir until the sugar is completely dissolved.
- Once dissolved, bring the syrup to a simmer and let it reduce slightly for 5 minutes until it thickens. Stir in the vanilla extract and a pinch of salt.
- Gently warm the silken tofu in a microwave or a steamer for about 2-3 minutes until heated through.
- Divide the warm tofu among serving bowls. Using a large spoon, gently shave portions of the tofu into the bowls.
- Top the tofu with the cooked tapioca pearls and a generous drizzle of the warm brown sugar syrup. Serve immediately and enjoy.
