Ingredients
- 300g Rice noodles
- 1.5L Beef broth
- 200g Beef fillet, thinly sliced
- 100g Bean sprouts
- 1 Bund Fresh Thai basil
- 1 Star anise
- 1 Stange Cinnamon stick
- 3 cm Fresh ginger
- 1 EL Fish sauce
- 1 TL Cane sugar
- 1/2 Lime
- 1 Red chili (optional)
Instructions
- Soak or cook the rice noodles in hot water according to package instructions until tender but still al dente. Then drain and set aside.
- In a large pot, bring the beef broth to a boil with the star anise, cinnamon stick, and sliced ginger. Let the broth simmer gently for 15 minutes to allow the flavors to develop.
- Remove the spices from the broth. Add fish sauce and cane sugar, and stir well. Season with salt and, if desired, more fish sauce.
- Divide the soaked rice noodles among four serving bowls. Arrange the thinly sliced beef fillet strips on top.
- Pour the hot broth over the beef and noodles. The heat of the broth will instantly cook the thinly sliced beef.
- Garnish each bowl generously with fresh bean sprouts, Thai basil, a lime wedge, and optionally with red chilies for a touch of heat.
