  1. Soak or cook the rice noodles in hot water according to package instructions until tender but still al dente. Then drain and set aside.
  2. In a large pot, bring the beef broth to a boil with the star anise, cinnamon stick, and sliced ginger. Let the broth simmer gently for 15 minutes to allow the flavors to develop.
  3. Remove the spices from the broth. Add fish sauce and cane sugar, and stir well. Season with salt and, if desired, more fish sauce.
  4. Divide the soaked rice noodles among four serving bowls. Arrange the thinly sliced beef fillet strips on top.
  5. Pour the hot broth over the beef and noodles. The heat of the broth will instantly cook the thinly sliced beef.
  6. Garnish each bowl generously with fresh bean sprouts, Thai basil, a lime wedge, and optionally with red chilies for a touch of heat.
