Poppy Seed Rolls
These poppy seed rolls are perfect for a cozy breakfast. Crispy on the outside and airy-soft on the inside, with an aromatic poppy seed crust.

Ingredients
- 500g All-purpose flour type 550
- 1 Würfel fresh yeast
- 300ml lukewarm water
- 1 TL sugar
- 2 TL salt
- 50g poppy seeds
- 1 egg
- 1 EL milk
- 30g butter, softened
- 1 EL vegetable oil
Instructions
- In a large bowl, mix the flour with the salt. In a smaller bowl, whisk the fresh yeast with sugar and lukewarm water and let stand for 5 minutes until foamy.
- Add the yeast mixture to the flour and knead everything into a smooth dough. Add the softened butter and knead for another 5 minutes until the dough is elastic.
- Cover the dough in a lightly oiled bowl and let it rise in a warm place for about 60 minutes, until its volume has doubled.
- Divide the dough into 8 equal parts on a lightly floured surface and shape them into rolls. Place the shaped rolls on a baking sheet lined with parchment paper.
- Whisk the egg with the milk and brush the rolls with it. Then generously sprinkle with poppy seeds and let rest for another 20 minutes.
- Preheat the oven to 180°C top/bottom heat. Bake the poppy seed rolls for 15-20 minutes, or until golden brown.
