  1. In a large bowl, mix the flour with the salt. In a smaller bowl, whisk the fresh yeast with sugar and lukewarm water and let stand for 5 minutes until foamy.
  2. Add the yeast mixture to the flour and knead everything into a smooth dough. Add the softened butter and knead for another 5 minutes until the dough is elastic.
  3. Cover the dough in a lightly oiled bowl and let it rise in a warm place for about 60 minutes, until its volume has doubled.
  4. Divide the dough into 8 equal parts on a lightly floured surface and shape them into rolls. Place the shaped rolls on a baking sheet lined with parchment paper.
  5. Whisk the egg with the milk and brush the rolls with it. Then generously sprinkle with poppy seeds and let rest for another 20 minutes.
  6. Preheat the oven to 180°C top/bottom heat. Bake the poppy seed rolls for 15-20 minutes, or until golden brown.
