Ingredients
- 4 große Eggs
- 2-4 Corn Tortillas
- 200 g Black Beans (cooked)
- 1 Ripe Plantain
- 2 EL Vegetable Oil
- 1 Dose (400g) Canned Diced Tomatoes
- 0.5 Onion (small, chopped)
- 1 Zehe Garlic Clove (minced)
- 0.5 Jalapeño (deseeded, chopped, optional)
- 100 ml Chicken Broth or Water
- 1 TL Cumin (ground)
- 0.5 TL Oregano (dried)
- Nach Geschmack Salt and Black Pepper
- 2 EL Fresh Cilantro (chopped)
- 50 g Feta or Cotija Cheese (crumbled)
Instructions
- For the sauce, heat 1 tablespoon of vegetable oil in a medium saucepan over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened and fragrant. Add the minced garlic and optional jalapeño, and cook for another 1 minute.
- Stir in the diced tomatoes, chicken broth (or water), cumin, and oregano. Bring the sauce to a simmer, then reduce the heat and let it gently bubble for 10 minutes to allow the flavors to meld. Season with salt and pepper to taste.
- In a separate frying pan, heat 1 tablespoon of vegetable oil over medium heat. Fry the corn tortillas individually for about 30 seconds per side, until soft and slightly golden. Keep the tortillas warm.
- Slice the peeled plantain into diagonal rounds. Heat a little more vegetable oil in a skillet over medium-high heat. Fry the plantain slices for 2-3 minutes per side until golden brown and caramelized. Remove from the pan and set aside.
- In the same skillet, keeping it over medium heat, add a little more oil. Crack the eggs individually and fry them sunny-side up until the whites are set and the yolks are still runny, about 2-3 minutes. Lightly season the eggs with salt and pepper.
- To serve, place 1-2 fried tortillas on each plate. Spread the warm black beans over the tortillas. Then, carefully place one or two fried eggs on top of the beans and generously spoon the tomato sauce over everything.
- Garnish the Huevos Motuleños with the fried plantain slices, fresh cilantro, and crumbled feta or Cotija cheese for extra flavor and texture. Serve immediately and enjoy!
