Pestiños
Pestiños are traditional fried pastries from Andalusia, often enjoyed during Christmas or Semana Santa, but also a popular sweet breakfast. They are made from a simple dough, flavored, and then dipped in honey or sugar syrup after frying. The taste is sweet, crispy, and wonderfully spiced with anise and lemon.

Ingredients
- 500 g Wheat flour
- 125 ml Olive oil
- 125 ml White wine
- 1 EL Anise seeds
- 1 Lemon peel (organic)
- Eine Prise Salt
- 500 ml Vegetable oil (for frying)
- 200 g Honey
- 50 ml Water
Instructions
- In a pan, heat the olive oil with the lemon peel and anise seeds until fragrant (do not brown). Let cool and remove the lemon peel.
- In a large bowl, mix the flour with salt. Add the flavored olive oil and white wine and knead everything into a smooth dough. Let the dough rest for 30 minutes.
- Roll out the dough very thinly on a floured surface (about 1-2 mm thick).
- Cut the dough into squares (about 5x5 cm). Gently pinch each square in the middle to form a bow shape.
- Heat vegetable oil in a deep pot to 170-180°C. Fry the Pestiños in batches until golden brown (about 1-2 minutes per side).
- Drain the fried Pestiños on paper towels.
- In a small saucepan, heat the honey with water until the honey is liquid. Briefly dip the Pestiños in the warm honey syrup, then let them drain on a wire rack.
- Serve once slightly cooled.
