Yogurt Cake
Bizcocho de Yogur is a simple but incredibly popular Spanish cake, often served for breakfast or as an afternoon snack. It is characterized by its moist texture and slightly lemony flavor. Preparation is easy and it's perfect for the whole family.

Ingredients
- 1 Becher (125 g) Plain yogurt
- 3 Eggs
- 2 Becher (Joghurtbecher als Maß) Sugar
- 1 Becher (Joghurtbecher als Maß) Vegetable oil
- 3 Becher (Joghurtbecher als Maß) Wheat flour
- 1 Päckchen (16 g) Baking powder
- 1 Lemon zest (organic)
- Eine Prise Salt
- Optional Powdered sugar (for dusting)
Instructions
- Preheat the oven to 180°C (top/bottom heat). Grease and flour a cake pan (approx. 22-24 cm diameter).
- In a large bowl, beat the eggs with the sugar until the mixture is light and creamy.
- Add the yogurt, oil, and lemon zest and mix well.
- In a separate bowl, mix flour, baking powder, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake in the preheated oven for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Optionally dust with powdered sugar before serving.
