Chocolate Mousse

Ingredients
- 200g Dark chocolate (min. 70% cocoa)
- 4 Large eggs, separated
- 50g Sugar
- 2 EL Water
- 1 Prise Pinch of salt
- 100ml Cold whipping cream (optional)
- 1 TL Vanilla extract
Instructions
- Chop the dark chocolate coarsely and melt it over a double boiler. Stir occasionally until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk the egg yolks with 2 tablespoons of sugar and water until light and creamy.
- Gradually stir the melted chocolate into the egg yolk mixture until well combined.
- In a clean bowl, whisk the egg whites with a pinch of salt until stiff. Gradually add the remaining sugar and continue whisking until a firm, glossy meringue forms.
- First, fold in one-third of the egg whites into the chocolate mixture to lighten it. Then gently fold in the remaining egg whites until no white streaks are visible.
- If desired, whisk the cold whipping cream with vanilla extract until stiff and gently fold into the mousse.
- Spoon the mousse into dessert glasses and chill in the refrigerator for at least 2-4 hours, until set.
