  1. Chop the dark chocolate coarsely and melt it over a double boiler. Stir occasionally until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whisk the egg yolks with 2 tablespoons of sugar and water until light and creamy.
  3. Gradually stir the melted chocolate into the egg yolk mixture until well combined.
  4. In a clean bowl, whisk the egg whites with a pinch of salt until stiff. Gradually add the remaining sugar and continue whisking until a firm, glossy meringue forms.
  5. First, fold in one-third of the egg whites into the chocolate mixture to lighten it. Then gently fold in the remaining egg whites until no white streaks are visible.
  6. If desired, whisk the cold whipping cream with vanilla extract until stiff and gently fold into the mousse.
  7. Spoon the mousse into dessert glasses and chill in the refrigerator for at least 2-4 hours, until set.
