  1. Melt the butter in a saucepan over medium heat and continue to heat until it turns a golden brown color and smells nutty (hazelnut butter/beurre noisette). Strain through a fine-mesh sieve and let cool.
  2. Preheat oven to 180°C (350°F). Lightly grease and flour Financier molds (or mini-muffin tins).
  3. In a bowl, combine almond flour, confectioners' sugar, all-purpose flour, and salt.
  4. Lightly whisk the egg whites (do not whip to a foam) and add them to the dry ingredients along with the vanilla extract. Mix well.
  5. Stir the cooled hazelnut butter into the batter mixture until well combined and a smooth batter forms.
  6. Fill the prepared molds two-thirds full with the batter.
  7. Bake in the preheated oven for 12-15 minutes, until the Financiers are golden brown and slightly crispy at the edges.
  8. Remove from the oven, let cool briefly in the molds, then invert onto a wire rack and let cool completely.
