Financiers are small French almond cakes known for their golden color and buttery, nutty flavor. Traditionally, they are baked in small rectangular molds and are perfect with coffee or tea.

Ingredients
- 120g Unsalted butter
- 60g Almond flour
- 60g Confectioners' sugar
- 30g All-purpose flour
- 3 Egg whites (medium)
- 1 Prise Pinch of salt
- 1/2 TL Vanilla extract
Instructions
- Melt the butter in a saucepan over medium heat and continue to heat until it turns a golden brown color and smells nutty (hazelnut butter/beurre noisette). Strain through a fine-mesh sieve and let cool.
- Preheat oven to 180°C (350°F). Lightly grease and flour Financier molds (or mini-muffin tins).
- In a bowl, combine almond flour, confectioners' sugar, all-purpose flour, and salt.
- Lightly whisk the egg whites (do not whip to a foam) and add them to the dry ingredients along with the vanilla extract. Mix well.
- Stir the cooled hazelnut butter into the batter mixture until well combined and a smooth batter forms.
- Fill the prepared molds two-thirds full with the batter.
- Bake in the preheated oven for 12-15 minutes, until the Financiers are golden brown and slightly crispy at the edges.
- Remove from the oven, let cool briefly in the molds, then invert onto a wire rack and let cool completely.
