French Toast

Pain Perdu, literally 'lost bread', is a classic French breakfast or dessert dish designed to use up stale bread. It's soaked in an egg and milk mixture, then fried until golden brown. The result is a sweet, soft, and irresistible dish, often served with powdered sugar or maple syrup.

Instructions

  1. First, in a wide, shallow dish, whisk together two large eggs, 120 ml whole milk, 30 ml heavy cream, two tablespoons granulated sugar, half a teaspoon vanilla extract, and a pinch of salt. Ensure all ingredients are well combined to create a homogenous mixture; this is the foundation for your perfect French Toast.
  2. Now, place the four slices of aged bread, ideally brioche or baguette, one by one into the prepared egg mixture. Allow each slice to soak for about 30 seconds per side. It's important for the bread to absorb the liquid well without becoming completely soggy, to prevent it from falling apart while cooking.
  3. Meanwhile, heat a large skillet, preferably cast iron, over medium heat. Add two tablespoons of unsalted butter and let it melt slowly until it's lightly foaming but not browned. Achieving the optimal temperature is crucial for even browning.
  4. Carefully place the soaked bread slices into the hot skillet. Cook them for about 2 to 3 minutes per side until they achieve a beautiful golden-brown color and are crispy. Flip the bread only once to ensure even browning. Make sure to adjust the heat if the bread is browning too quickly.
  5. Remove the finished French Toast slices from the pan and arrange them immediately on plates. Dust them generously with powdered sugar—this isn't just for decoration; it perfectly complements the flavor. Serve immediately to ensure the best enjoyment, warm and crispy.
